Sheer khurma

Ingredients

  • 3 cups milk
  • 1/2 cup vermicelli
  • 2 tbsp sugar
  • 1 tbsp ghee
  • 8 cashew nuts, chopped
  • 8 almonds, chopped
  • 8 pistachios, chopped
  • 5 seedless dates, chopped
  • 1/2 tsp chironji or charoli
  • 1 tbsp raisins
  • 1/2 tsp cardamom powder
  • 1/2 tsp rose water
  • 1/2 tsp saffron

Method

Step 1

Heat 1 tsp of ghee in a pan. Add vermicelli and roast it until it turns golden. Keep this aside.

Step 2

To the same pan add the remaining ghee, chopped nuts and dry fruits. Saute for about 2 – 3 min.

Step 3

In the meantime, boil milk in another pan until it reduces to half or gets thickened.

Step 4

Add vermicelli and sugar into boiling milk. Stir occasionally on a low flame. Cook until the vermicelli turns soft.

Step 5

Add the nuts and dry fruit mixture to it and keep stirring for another half a minute.

Step 6

Add cardamom powder and rose water. Mix well and switch off the flame.

Step 7

Garnish it with saffrons strands and serve hot or chilled.
